I'd like to delete the files that people upload after I've downloaded them so that it doesn't take up space on the server. Where can I find the files that people have uploaded for me?

The easiest way is by deleting the entries from your admin panel.
When you delete an entry, all associated files will be deleted as well.However, if you only need to delete the files, without deleting the other form entries, you can go to "files" folder under your "data/form_x" folder (x is your form id number).

Is there a way to not save the uploaded files to the server at all? I just want them sent as an email attachment, then deleted from the server.

It is possible through some modification. Do you want to do this for all of your forms? Also, the option to attach the file within the email only available since version 3
